The Ultimate Pizza Stuffed Pork Tenderloin

If you love pizza and juicy pork, this recipe brings them together in one incredible dish. We take a butterflied pork tenderloin, pound it thin, and stuff it with a savory, pan-softened blend of red bell peppers, sweet shallots, and premium Windsor pepperoni.
After a dusting of parmesan cheese, the roll is seared and baked in a cast-iron skillet to a perfect 145°F.
Serve it up with some roasted potatoes for an easy dinner that hits all the comfort food cravings.
Ingredients
- 1 Pork Tenderloin
- 1/2 Red Bell Pepper, finely diced
- 1/2 Shallot, finely diced
- 1 generous handful of Sliced Pepperoni (Windsor pepperoni highly recommended), chopped
- 1 tbsp Olive Oil (plus a splash extra for the pan)
- Salt and Black Pepper to taste
- 1 tsp Dried Oregano
- 1/3 cup Parmesan Cheese
- Toothpicks (for securing the roll)
Instructions
- Deseed and finely dice half of a red bell pepper.
- Peel and finely dice half of a shallot.
- Roughly chop a handful of Windsor pepperoni into small pieces.
- Heat a cast-iron skillet over medium heat and add a small splash of olive oil.
- Add the diced peppers, shallots, dried oregano, salt, and black pepper to the pan, and sauté for 3 to 4 minutes until the vegetables are softened.
- Toss in the chopped pepperoni, mix everything together, and remove the pan from the heat.
- Stir in the parmesan cheese to bind the mixture, and set the filling aside.
- Butterfly the pork tenderloin by slicing it lengthwise down the middle, stopping about 1/8-inch from the bottom so the meat opens up like a book.
- Cover the butterflied pork with plastic wrap and pound it flat with a meat mallet until it reaches an even thickness.
- Spread the warm pepperoni and vegetable filling evenly across the flattened pork, leaving a slight border near the edges to keep the mixture contained.
- Tightly roll the pork tenderloin from one end to the other, gently tucking the ends inward to secure the filling.
- Secure with toothpicks.
- Wipe the cast-iron skillet clean, add a fresh tablespoon of olive oil, and place the rolled pork in the center of the pan.
- Bake in a preheated oven at 350°F for 15 minutes.
- Flip the pork roll over and bake for an additional 12 to 15 minutes until the center reaches an internal temperature of 145°F.
- Remove the skillet from the oven.
- Remove toothpicks.
- Let the pork rest for a few minutes before slicing it into evenly sized medallions.
